Blackberry Crème Brûlée
Ingredients:
2 cups cream
1/2 cup blackberry fruit puree
5 egg yolks< /p>
1/2 cup granulated sugar
1 teaspoon vanilla extract
4 tablespoons granulated sugar (to caramelize for)
Preparation:
- Mix the cream and blackberries in a pot. Gently heat the puree (be careful not to boil).
- Scratch the egg yolks and sugar in another bowl.
- Slowly add the heated cream to the egg mixture, stirring constantly.
- Vanilla extract. Add and pour the mixture into small baking dishes.
- Place the containers on a tray and add hot water to the tray until it reaches half of the containers. Bake at 160°C for 30-35 minutes.
- Sprinkle granulated sugar on the cooled dessert and caramelize it with a confectionery torch or oven grill.
